Abstract

There were studied the physicochemical indices of quality of natural honey normalized in Ukraine and abroad. The dominant ones that determine the level of its quality are the mass fractions of sugars, proline and diastase number, and the principal compound which presence determines the level of safety of honey for health of consumers is hydroxymethylfurfural. There was carried out the analysis of nine specimens of natural honey sampled in all regions of Ukraine and shown that their quality conforms to norms of European directive and international standard for honey.
