In the work, a mathematical model of convective drying of fruits (in the form of a plate, a cylinder, a sphere) under the conditions of periodic thermal action (in solar drying installations), which is in good agreement with the experimental data, is obtained by a joint solution of the system of differential equations of grating and mass transfer, with appropriate boundary conditions
